Banana Pitha cake


When I went to my mom-in-law's place, I got to taste a variety of Pithas. Pitha is Odiya version of south Indian Dosa. Only that, it is thicker. Here is one of the varieties of such Pitha


Ingredients required


Urad dal - 1 cup
Rice raw - 1 cup
Par boiled rice - 1 cup
Ripe banana - 2
Cardamom powder - 1 tsp
Oil - half a cup
Sugar - 3/4 cup
Salt - 1 tsp

Method
Soak the urad dal and rice for 5 hours, and grind it in a mixer into smooth batter. This should be a little thicker than the idly/dosa consistancy. Mix in salt and leave it overnight to let yeast do its work. Next day morning, the flour would have come up the vessel. Mix in sugar, mashed banana, cardamom powder. You can beat the banana in a mixer.

Take a small thick kadai, with deep bottom. Grease it well with oil, pour in one tsp of oit after greases, and keep it on the stove. When the Kadai, is well heated up, pour in batter to cover 1/4th of the kadai. Keep the stove burning in simmer and let in be so for 10 mins. The underside of our Pitha cake would have becoume crispy brown and, on the upper side, you can see that the batter is almost cooked. Turn the cake upside down and let it brown. Once done, remove from kadai, cut it into four pieces with knife. Serve hot with chutney.
